Melt in your Mouth Blueberry Bread
1 ½ cups sifted flour (Save 1/8 cup to dredge berries)
1 tsp baking powder
Sift three times.
¼ tsp salt
Beat 2 egg whites stiff and set aside
½ cup softened butter
1 cup sugar
Cream butter, sugar and eggs
2 beaten egg yolks
Add alternately – 1/3 cup milk and flour mixture
Begin and end with dry ingredients
Fold in egg whites, 1 tsp vanilla, and 1 ½ cup floured blueberries
If batter is too thick add milk
Sprinkle with a little sugar
Bake 350 for 35-45 minutes until light brown.
